I really liked the way this recipe turned out. Although, it's not really bagel-like, it has very good structure, and flavor. It will definitely hold up to a juicy burger without falling apart. Thanks.

This is a really good recipe and is definitely worth the time to make. Every other bread recipe tastes eggy like baking poweder or like cheese and eggs. This actually tastes like bread

Best keto bagel recipe I’ve tried so far. This one has the closet texture & taste to a regular bagel. I didn’t have inulin powder so I substituted it with beef gelatin powder.

Didn't have inulin so I adopted the 1.5cup almond flour version. It wasn't bagel bagel but it was tasty! While it had structure, it was still crumbly so I couldn't use it like a burger bun. It tasted more like a dinner roll/biscuit. Still liked it but due to the high calories, I'll probably save this as a recipe once in a while

@ketofocus These babies tasted even better after sitting in the fridge overnight and toasted again this morning! I found myself reaching out for these bagels like a snack (pinching a little due to the calories)! Danger zone!! Maybe I should make them into mini bite sizes next! Also, would like to check that the following is to replace both the 1 cup almond flour and 2 tbsp inulin, or is it in addition to it? "For lupin flour, use 1/2 cup almond flour+ 1/4 cup lupin flour and 3-4 tablespoons water" Thank you so much ❤️

I made it today. Didn't have inulin so I used 2 tbsp of oat fiber. Great texture n flavor. But my bagle didn't raise. It's the same size as u bake it. Tks for the great recipe

Great! Thanks for the info. I was wondering how it'd turn out with oat fibre instead of inulin as that's what I have on hand and inulin is kind of expensive to buy here in Toronto, not sure how much it is in the states. I will try it using that as well and maybe doubling the baking powder to see if it helps with the rise.

Yum!!! Added 1 tsp of gelatin and 1 tsp of yeast (for texture and taste) and I really enjoyed these!! I made 6 smaller bagels by using a donut pan and topped with everything bagel. Absolutely by far the best keto bagel I've ever had!

I got the inulin powder. But my protein powder is vanilla ice cream. Its in the oven now. I cant wait to taste them. One I will probably toast. Let ya know how they come out.

How did you find the ones made with lupin turned out? I have lupin on hand. Inulin is very hard to find in Canada, as are most keto friendly products.

Try adding cinnamon, pumpkin pie spice, or lemon extract with blueberries. Lemon extract with poppy seeds. With the spices I splurge with peanut butter.

I'm 6 years Paleo and don't do protein powder but I have grassfed bovine gelatin. Will that work? My inulin will be arriving within the week and I'm excited to try this recipe! I boil and bake cassava bagels for my daughter but they're a little too high in carbohydrates for my system. The smell's absolute torture! My house smells like a bakery when I make them!

So wondering if 2 tablespoons of water is correct? In one cup of almond flour, I must have used at least a 1/4 of a cup to form a dough. I also used oat fiber instead of inulin fiber.

It’s correct. If you add too much, they don’t keep their shape. Did you add the egg? If you substituted with oat flour, that could be why. If it needs more water, then add it.

Yes, the macros change. It’s not very much though. It would be more carbs if you added all almond flour. The flavor is similar.

Can you please explain! because I was figuring there's 24 tablespoons in the almond flour needed if not using inulin but I was also thinking that's 60 carbohydrates minus the 10 g of fiber, when using inulin, divided by the 4 bagels and I'm coming up with 12 or 15 net carbs

1 cup almond flour has 23 carbs and 11 grams of fiber, so 12 net carbs, or 3 each. Inulin powder has 4 carbs and 4 grams of fiber, so zero net carbs. I used the 1/2 cup almond four, 6 carbs, and a 1/4 cup lupin flour which is about 1 net carb, so 7 total, or about 1.75 net carbs. Eggs have 1.1 carbs so add a bit too.

I have a question... To keep the bagels from getting soo crispy/crunchy on the tops & maintain a softer texture like the real deal ones, what do you think about baking them on the pan but somehow in a water bath, of course with out touching the water?

Wouldn't work with almond flour which really isn't a flour at all they would likely fall apart in the steam from the bath.

Fat head dough is made from cheese and almond flour. I’ve used it to make pizza before, but it’s calorie dense and high in fat. It makes a good pizza, but for me personally, that’s a lot of fat at once.

I thought of that too…using a piping bag with no tip, just the bag cut with a rather large hole. Also wondering about a donut pan, the bagels might be a bit smaller though?

Quick question - do you know if the company that sells meat is cruelty free? We do enjoy eating meat though I do feel guilty. I try to make sure that at least these animals had a decent life prior to giving themselves up for me. Additionally for people who don’t much care about that - animals that aren’t stressed produce a higher quality meat that’s better for you. Stressed animals, especially prior to slaughter dump excessive amounts of stress hormones such as epinephrine, norepinephrine, etc. Additionally animals living in poor conditions, there meat is of poorer quality overall related to conditions they grew up in Ok I’ll get off my soapbox now!

All of the ranchers that partner with crowd cow care about their animals. Many of the ranches are small and their animals are raised on miles of green pastures. Their meat is high quality. I can taste it. I know what meat tastes like from a stressed animal. It’s not pleasant tasting.

Why do your recipes always have like xanthan gum in there and or protein powder I would like to see some of these recipes done without those ingredients because those are additives that manufacturers put in there products Xanthan gum is a stabilizer used for longer shelf life Protein powders are highly processed and in many cases chemicals are used in the processing of those protein I'm a label reader So can we try better make it cleaner
