All Bulgarians' favorite recipe for tongue in butter, we usually eat it in restaurants, but preparing it at home is not complicated at all as long as you follow the 3 basic rules:
❗️Leave the tongue for 1-2 hours in a bowl of cold water
❗️Cook it for 2 hours in broth with lots of vegetables and salt
❗️Remove and transfer to a large bowl of ice water for about 10 minutes before peeling.
The rest is up to you.
We boiled a tongue weighing 1,150 kg.
After we cooked it we cut it into slices and fried it in a pan with butter and some red pepper and served it with a garlic and vinegar sauce!
A superb dish from Bulgarian cuisine, ideal for the winter months and especially for the festive season!
