Hi Metta! The custard is still in liquid form at room temperature but will become soft paste in the fridge. ☺️

I may ask a stupid question. Shall I keep the moon cake in fridge or room temperature? I wonder if the filling will have the same texture if I keep them in fridge. Thank you so much for sharing your wonderful recipes

Hahahah not at all! The filling will harden in the fridge but it will make sure they don’t go bad so fast. So it’s better to keep in the fridge and heat it up again before serving 😋
Hi,kye , I made this custard mooncake the other day, unfortunately, it came out no lava custard, the .center part just mixed together with the custard filling, became all solid . Also the out side the top and bottom got burnt .I am just wondering if the oven temperaturn set at 200 Celsius would be too high ? since I oven goes by Fahrenheit, so I set it at 400 f . Could it be the reason that the Moon cake got burn and lava custard?

Hi Eunice, the lava should be able to remain liquid even at high temp. Maybe it’s already mixed with the custard filling? 🤔 200c is what I used for my oven. It’s baked at high temp cause we only need to get the outer layer baked as filling is already cooked before sending to oven. And all oven is different. Maybe try baking it at lower temp or for a shorter time and remember to keep an eye on it while baking ☺️ consider getting an oven thermometer also. It’s pretty affordable and can make your baking result very consistent 😁

@@KyesKitchen Thanks for your advices , kye. I need to watch on it during baking, might set the lower temperature as well. For the lava part , as you said I probably mixed with filling custard already while I tried to wrap it in the filling :( this is the most difficult step of the whole recipe , let me try again later . Thanks again :)
