Let’s make Diwali faral special tikhat chirote today. This is a very easy and simple recipe. This is a real quick and simple recipe. It turns out nice, crispy and flaky. They just melt in mouth. We already have seen 2-3 chirote recipes. But those were sweet chirote. These are thkhat or pungent chirote. You can try this recipe at home and drop a comment for me. Ingredients:
• 2 cup Maida
• 1/4 cup hot Oil
• 1 tsp Ajwain / Carom seeds
• Salt to taste
• 1/2 cup warm Water
• 2 tsp Red chili powder
• 1/4 tsp Black salt
• 1/2 tsp Cumin powder
• 4 tsp Dalda / Vanaspati ghee
• 2 tsp Corn flour
• Oil for frying
Method:
• In a food processor, add maida, hot oil, carom seeds and salt and pulse it until oil is well
combined with maida.
• You can crumble it together with hands too.
• Add warm water and blend to make semi soft dough.
• Cover and rest the dough for about 15-20 minutes.
• For making masala for chirote mix red chili powder, black salt and cumin powder well together in
a bowl and masala is ready.
• For making sata for chirote mix dalda and corn flour well together in a bowl and beat it really
good until it turns light and fluffy. Sata is ready.
• You can use rice flour or maida in place of corn flour.
• Knead the dough well once and take a portion from it.
• Make it smooth and even and roll out as thin chapati as possible.
• Spread the sata evenly on it.
• Lift one side and roll it into as tight roll as possible.
• Roll it well once more and cut small pieces from it.
• Transfer the pieces into a bowl and take one of it.
• Roll out a small disc from it. The side having layers should face upward while rolling.
• The chirota should not be thin.
• Heat up oil on medium heat in a pan and drop chirote into it.
• Fry the chirote well on low to medium heat until it gets golden color from both sides.
• When the chirota is fried well from lower side, flip it over and fry well from other side too.
• When chirota is fried well from both sides, take it out, drain excess oil and transfer it into a dish.
• Sprinkle the masala on both sides of the chirote when they are still hot.
• Let the chirote cool down completely and store them in an airtight container.
• They have shelf life of about a month.
