STEPS and TIPS
1) TIP - Remove the milk into a steel utensil from the packing immediately after buying
2) TIP - Heat the milk on medium to low flame to obtain thick cream
3) TIP - After the boiled milk cools down keep it in the fridge uncovered for minimum 2 days
4) Remove the thick cream from the chilled milk
5)TIP - If you wish to store the cream store it in the freezer compartment of the fridge
6) After accumulating desired quantity of the cream defrost the cream and warm it. (In winter heat the cream slightly more than in summer)
7) Add 1 or 2 tbsp of curd or 4 tbsp of buttermilk to the warm cream.
8) Stir well and keep covered in a warm place to set. (it takes 5 to 8 hrs. depending on atmospheric temperature)
9) Once properly set keep the cream in the fridge to be chilled.
*TIP - Do not keep half set cream in the fridge as it will not turn into butter after whipping
10) Whip the chilled cream to get the butter.
11) TIP - Once the butter is obtained wash it thoroughly with ice cold 31water thrice. Store the water (butter milk) from the washed butter.
12) Boil the butter on low flame till light golden ghee is formed
13) TIP - Switch off the heat immediately after the ghee is faint gold in colour as due to heat of the cooking pot the cooking process will continue even after switching off the heat
14) Filter & Store the ghee in dry container (preferably steel container)
MASALA BUTTERMILK
1 glass buttermilk
2 pinches of cumin powder
1 pinch asafoetida
Black salt as per taste
BERRY (residual after cooking ghee) RICE
1) Add a glass of water to the pot having residue of the ghee and boil & filter
2) Cook rice in this boiled filtered water.
3) Enjoy with Dal tadka.
