How often should we stimulate the meridians of a specific organ?

Such a good question! But unfortunately, there isn't an easy answer :) It will depend on your condition. The great news is that when we work with the meridians we tap into the bodies wisdom, and it generally can't cause harm, so I recommend experimenting and see what works for you :)
