I made two dough balls, one with King Arthur bread flour, the other with King Arthur all-purpose flour. The bread flour only has 1% more protein than the all-purpose flour. However, the crust made with bread flour had better shape (more air bubbles in rim), better color, and a tiny bit more flavorful.
Recipe (makes 1x255 gram dough ball):
153 grams flour
100 ml water
4.3 grams table salt
.5 grams yeast
1.5 grams sugar
2 grams olive oil
