Say goodbye to my biggest beef: using canned soup, and other unhealthy ingredients. I recently discovered a new canned soup and beans that's made a world of difference for my family dinners. Now I can feel good about what I’m serving, and dinner prep has never been easier! 💪🍽️
Want to spice things up? Add fresh jalapeños or spicy green chilis. But since my kids love it mild, I just splash in some hot sauce at the end. This recipe is super versatile, with easy ingredient swaps for dairy-free or vegetarian versions! 🌿✨
Ingredients:
- 1 1/2-2 pounds chicken thighs (breasts work too!)
- 1 yellow onion, chopped
- 1 green bell pepper (or red, yellow, or orange)
- 1 bunch of cilantro, chopped
- 2/3 cup chicken stock
- 1 cup plain Greek yogurt (I use lactose-free)
- 1 can Rotel (keep the juice!)
- 1 can HeyDay Corn Chowder (or regular corn)
- 2 cups cheddar cheese
- 2 tbsp butter
- 1 bag Siete Lime Corn Chips
- Salt, pepper, onion powder, garlic powder, taco seasoning, cumin, chili powder
Instructions:
Preheat Oven to 350°F
1. Boil chicken in water until cooked to 165°F (about 10 mins).
2. Drain (save water for chicken stock if needed).
3. Shred the chicken (I’ll show you how in the video!).
4. Chop onion and bell pepper; sauté in 2 tbsp butter for 4 mins on medium-high heat.
5. Once translucent, add Rotel, corn chowder, chicken stock, and Greek yogurt. Stir well.
6. Mix in 1/2 cup cheese and seasonings (about 1.5 tsp each, adjust to taste). Simmer on low for 4 mins.
7. Spray a 9x13 dish with non-stick avocado oil or butter. Crush the bag of Siete chips (I love lime flavor).
8. Layer the bottom with chips, then half the king ranch chicken mixture, and top with cheese. Repeat with another layer of chips, chicken, and finish with cheese.
9. Cover with a sheet of foil (spray one side to prevent sticking).
10. Bake in oven for 30 mins, remove foil and place back in over for 8-10 minutes or broil for 3 minutes
11. Remove and let cool for about 5 minutes. Serve with some hot sauce or avocado slices on top! 🤤
