I recently stumbled upon a delightful find at Costco-a two-pound box of Kirkland Garlic Butter Shrimp, and I must say, it's quite the treat! The shrimp are frozen, but they cook up in a jiffy, about ten minutes, and they're immersed in a scrumptious garlic butter sauce. If you fancy, you can jazz up the sauce with some lemon juice and red pepper flakes, but I find it absolutely delightful as is.
In the box, you'll find two plastic bags, each holding a pound of this garlic butter goodness. It's quite the surprise that the sauce is frozen directly onto the shrimp, no separate pouch here! And the “Sell By” date is about two years from when I made my purchase, so it has a long freezer life.
Cooking them is a breeze! I prefer sautéing them over medium heat for about 10 minutes until they turn pink and begin to curl. But if you're cooking both bags, baking might be the way to go-just preheat your oven to 450F and bake for 14 minutes, flipping them at the 7-minute mark. Microwave cooking is also an option, but I wouldn’t recommend it.
I love serving them over rice, but pasta, grits, or even mashed potatoes would do. And a slice of crusty bread on the side to soak up that rich, buttery sauce is just divine! However, be warned, the butter can be a bit overwhelming-I sometimes find myself draining off some of it.
Now, if you're watching your waistline, this might not be the dish for you. One serving packs 350 calories, 31g of fat, and 240mg of cholesterol, thanks to all that delicious butter. But the convenience is unbeatable, especially for quick weeknight meals. The portion size is perfect for two, and it cooks up fast, around 10 minutes.
Price-wise, the two-pound box costs $15.99, which I think is perfectly fair considering the quality and convenience of the meal. I've started keeping my freezer stocked with them, and I must say, they're a lifesaver for fast weekday lunches.
