Why such short a knife for bread? What happens if you actually get a good oven spring on your flat bread loaf? Your hands look much younger than your voice would indicate, and shots of your hands in your previous videos. They belong to someone in their late teens maybe, or early 20's? Your son? Love your unabashed reviews and insights on the engineering and credibility of products. Keep it up.

For annealed high alloy steels you want HSS-E or better yet HSS Cobalt with 5-8% cobalt content. Better run too slow than too fast. Steady workpressure. Coolant as per usual. Dry works fine on thin stock as well. Carbide is another option but is fairly expensive and needs high rpm and a sturdy machine with good work holding as to avoid ruining your bits. No coolant or flood coolant ONLY. Anything inbetween will ruin carbide.

I don't really understand why everyone puts teeth a bread knives. It works so much better with a long sharp knife with no teeth ...
@GotrekGurninsson

Most people don't sharpen their knives. Imo that's the reason. Teeth let the knife still "work" when dull
@WUNDER8AR

Serrated can take far more abuse. Crust means abuse. Its very hard and doesn't cut very well even with a very sharp edge. You tend to push it into the hard crust rather than cut, potentially damaging the delicate edge.
