I got this rusty cleaver for 5$ at a flea market. I thought I would restore it; but a big hole in the blade made me think I should go another route with it;
So I made a Japanese Santoku style knife instead.
I learned a lot about Japanese kitchen knives in the process, the different styles and types of knives, and the difference from European chef knives.
I hope I saved and maybe revived this old rusty cleaver and I hope it has a long new life in its new incarnation as a Santoku.
I found no makers mark or and distinctive features on this old rusty cleaver so I am fairly confident that I did not ruin a piece of history, I hope so anyway.
