I've visited the Zippo/Case museum, pretty cool place. I'm from Bradford county (not Bradford the town Zippo is located in) and I own several Zippos, but I've not owned any Case knives. This is a pretty nice looking set and I love it's made in the U.S., I might have to buy it.

Great review, its great you pointed out about how the knife would be better if it had a rounded spine I totally agree with you. I myself would like to see some more kitchen knife reviews. Keep them coming!

I'm definitely considering getting one of these sets, either this specific one or the Cold Steel one for my parents to use in their kitchen because they have some super cheap knives that are made of crap steel and have zero heat treat. I will get them to razor sharp level and with one or two light tasks the edge is completely worn out or rolled over.

I like the classic look! I'm not about to trash my victorinox and wusthof, but I may add a piece or two of these to my block. Although I'd love to eventually graduate to forged knives, if I can ever persuade myself to spend that kind of money on kitchen knives when mine work just fine.

i bought the Ontario knife co butcher, slicing and skinner, parsing knives. I am trying to convert the slicing knife to a bushcraft knife by reprofiling and shortening the knife but I have to swap out the brass pins on the handle with post screws. In the meantime the okc boning knife is one of my temporary bushcraft knives. The Okc knives are all 1095 steel and the knives are dirt cheap between $10 and $15. Too bad the okc parsing knifes are not full tang like the case versions.

Seems like a decent set. I'm using a set of global kitchen knives ( just 3 knives, all i need), you really want to try out a global chef knife, every time you need to really do some hours of cutting, you'll love it.

Nice set! I may be wrong but I always thought that the knives that you called butter knives are actually called table knives or dinner knives and are for general cutting on your plate and a butter knife is similar but doesn't have that acute edge that you were referring to and you only have one to a set. Not sure but I don't think that you are too off the mark in using them for cutting your meat.

Jeff does anyone make knives like these in simple carbon steel. In recently restored a old rusty chef knife and it has become my favorite knife. It is simple but cuts great and takes a scary edge easily.

Amazon has the Case steak knives (set of 4 in wooden box) for 142 dollars. Looks pretty damn nice, if you're cool with $142 for steak knives.

Nice vid, as always. 2 things, though: 1) I'd never get a knife block, because it usually is a way to push more knives on the buyer than he wants/needs. I'd rather use my money on two, three or even four really good knives than buy a whole set of middle of the road knives. Just IMHO. 2) More importantly, I dislike honing steels for the following reason: they stress the edge by bending it to and fro. That means, when you start using a honing steel you'll have to use it regularly, as the steel is weakened and will tend to get out of alignment more easily (like bending a paperclip will eventually break it). I can see the need for steeling in the butcher trade or in professional kitchens as they cut a lot and can't spend as much time on maintenance as you can - so they use this quick and dirty method. But notice how often they steel their knives inbetween cuts: with butchers it is almost every other cut. Moreover, steeling will give you an OKish edge, but not the best possible edge. Also, it works best on softer, more pliable steels - for higher end steels a honing steel might not work as well or even chip out the edge. That said, I much prefer a ceramic rod for touch ups, as it gives a new crisp edge w/o overly stressing the steel.

ehh, I usually prefer thick FFG knives for the kitchen :/ And it is by far easier to cut vegetables and small objects with the large chefs knife. Silly silly Jeff.

I was looking a a knife set for when my sister moved into her new house. I was with my other sister looking at them and saw that it said 18 piece set and only counted 17 knives and I said they are short one knife not knowing that the block was one of the pieces but now that I do I can tell other people that.
