Knish is a stuffed pie baked from lean or yeast dough. The filling for knysha differs depending on the region of Ukraine. Hutsul-style knishes are usually made with cheese, there are also fillings with buckwheat porridge and crackers, sauerkraut or boiled potatoes with onions. Today you will see how to cook knish according to a simplified recipe. You will definitely like these knishes with potatoes. And not only because it is a Ukrainian dish, but also because it is incredibly tasty!

Ingredients for cooking knish
1 package of cheese with slices of Havarti from KOMO (160 g)
1 kg of puff yeast dough (+ flour for dusting)
4-5 potatoes
1 bulb
50 g of walnuts
3 Art. l. oil
1 yolk (for greasing)
1 bunch of parsley
salt and pepper to taste
Step-by-step process of making knish
Peel 4-5 potatoes, cut them into medium cubes and put them in a saucepan. Pour water, add salt to taste and cook for 20 minutes.
Peel the onion and cut it into small cubes. Heat a pan with 3 tbsp. l. of sunflower oil and fry the onion until soft. Chop 50 g of walnuts with a knife.
Drain the water from the finished potatoes and mash them into puree, taste and add a little salt and pepper to taste. Add fried onions and chopped walnuts. Turn on the oven to heat up to a temperature of 180 degrees.
Open the package of cheese with slices of Havarti from KOMO (160 g). Cut the slices of cheese into medium cubes of approximately the same size and also add to the pan to the filling. Mix thoroughly.
Divide 1 kg of yeast puff pastry into two equal squares, dusting the work surface with flour. Divide the filling and place on top in squares.
Wrap the dough from the edges to the center, but before reaching the end, there should be a gap in the middle. Pin the edges of the dough together. Do the same with the second pie.
Place the formed pies on a baking sheet covered with parchment. Separate the egg yolk in a bowl and beat it a little with a fork. With the help of a cooking brush, grease the knishes with yolk. Put to bake in an oven heated to a temperature of 180 degrees for 30-45 minutes, check readiness with a wooden stick. Sprinkle the finished dish with chopped parsley.
