Ingredients:
For the Kofta:
500g (1 lb) ground beef
1 small onion, finely chopped
2-3 cloves garlic, minced
1/4 cup fresh coriander (cilantro), chopped
1/4 cup fresh mint, chopped (optional)
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground turmeric
1/2 tsp red chili powder
1/2 tsp garam masala
Khaskhash powder
Salt and pepper, to taste
Chickpea(chana)
For the Curry:
2 tbsp oil
1 large onion, finely chopped
2 cloves garlic, minced
1-inch piece of ginger, minced
2 tomatoes, chopped or blended
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground turmeric
1/2 tsp red chili powder
1/2 tsp garam masala
1 cup plain yogurt
1 cup water
Salt, to taste
Fresh coriander (cilantro), for garnish
Instructions:
Prepare the Kofta:
1. Mix Ingredients:
In a large bowl, combine ground meat, onion, garlic, coriander, mint (if using), cumin, coriander, turmeric, red chili powder, garam masala, khashkhash powder, chickpeasalt, and pepper. Mix thoroughly.
2. Shape Kofta:
Wet your hands and shape the mixture into small, round balls.
3. Fry Kofta:
Heat oil in a pan over medium heat. Fry the kofta balls until they are browned and cooked through. Remove and set aside.
Prepare the Curry:
1. Cook Onions:
In the same pan, add a little more oil if needed. Sauté the chopped onion until golden brown.
2. Add Ginger and Garlic:
Add minced garlic and ginger and cook for another minute.
3. Add Spices and Tomatoes:
Stir in cumin, coriander, turmeric, red chili powder, and garam masala. Cook for a minute until fragrant. Add tomatoes and cook until they break down and the oil begins to separate from the masala.
4. Add Yogurt and Water:
Lower the heat and stir in the yogurt. Cook for a few minutes until the yogurt is well incorporated. Add water to reach your desired consistency and simmer for 10 minutes.
5. Add Kofta:
Gently add the fried kofta balls to the curry. Simmer for another 10-15 minutes to let the kofta absorb the flavors.
6. Garnish:
Garnish with fresh coriander leaves.
Serve:
Serve hot with rice, naan, or roti.
