Lauki (bottle gourd) kofta is a delicious Indian dish made with grated bottle gourd, spices, and gram flour. The koftas are deep-fried and served in a rich tomato-based gravy. Here's a recipe to make Lauki Kofta:
Ingredients
For the Koftas
2 cups grated lauki (bottle gourd) wait 600gm
1/2 cup besan (gram flour)
2 green chili, finely chopped
1/2 tsp ginger, grated
1/4 tsp turmeric powder
1/2 tsp red chili powder
1/2 tsp garam masala
1/2 tsp cumin seeds
Salt to taste
Oil for frying
For the Gravy
2 tbsp oil
1 tsp cumin seeds
2 large onion, grand
1 tbsp ginger-garlic paste
3 large tomatoes, pureed
1/2 tsp turmeric powder
1 tsp coriander powder
1 tsp kishmeri mirch
1/2 tsp garam masala
1/4 cup yogurt (optional)
Salt to taste
Fresh coriander leaves for garnish
Instructions
Preparing the Koftas
1 Grate the Lauki Grate the lauki (bottle gourd) and squeeze out the excess water. Keep the water aside as it can be used later in the gravy
2 Make the Kofta Mix In a mixing bowl combine the grated lauki, besan, chopped green chili, ginger, cumin seeds, turmeric powder, red chili powder, garam masala, and salt. Mix well to form a thick batter
3 Shape the Koftas Heat oil in a deep frying pan. Take small portions of the lauki mixture and shape them into small balls or patties
4 Fry the Koftas Fry the koftas in hot oil until they turn golden brown and crispy. Remove them with a slotted spoon and drain excess oil on paper towels
Preparing the Gravy
1 Sauté the Onions Heat oil in a pan. Add cumin seeds and let them splutter. Add the chopped onions and sauté until they turn golden brown
2 Cook the Masala Add the ginger-garlic paste and sauté for another minute. Then add the turmeric powder, coriander powder, and red chili powder. Mix well
3 Add Tomatoes Pour in the tomato puree and cook until the oil separates from the masala
4 Yogurt (Optional) If using yogurt, whisk it well and add to the gravy, stirring continuously to prevent curdling
5 Add Water Pour in the reserved lauki water or add regular water to adjust the consistency of the gravy. Bring it to a boil
6 Finish with Garam Masala Add garam masala and salt to taste. Simmer the gravy for a few minutes until it thickens slightly
Assembling the Dish:
1 Combine Koftas with Gravy Just before serving, add the fried koftas to the gravy and simmer for a minute. Avoid adding the koftas too early as they may become too soft
2 Garnish and Serve Garnish with fresh coriander leaves and serve hot with roti, naan, or rice
