Kolambi Pattice is one of Anuya’s most loved recipes! It consists of prawns stuffed in a potato mould and shallow fried to make a crispy and highly flavourful patty. This dish can be served for breakfast or as an accompaniment with lunch and dinner. Enjoy with chutney or ketchup.

Ingredients :
Prawns
Boiled Potatoes
Onions
Garlic
Lemon
Green chillies
Coriander
Red chilli powder
Turmeric
Cornflour
Coriander powder
Garam masala
Salt
Cornflakes
Method :
1. To a grinder add 4-5 green chillies, 8 garlic cloves and a handful of coriander and blend well.
2. To 250 grams of small sized prawns add 1/4 spoon of turmeric, 1 spoon red chilli powder, 1 spoon Garam Masala, 1 spoon coriander powder, 1 spoon salt and squeeze 1/2 a lemon. Mix well and set aside.
3. Finely chop 2 onions. Add the green paste to the marinated prawns and mix well.
4. To a heated pan add 2 tbsps oil, 1/4 spoon asofoetida, add the finely chopped onions, add the marinated prawns, add water to cook and cover the pan and let it cook till the mixture is dry. Then set aside and let it cool.
5. Peel and grate 3 boiled potatoes for the coating. Add 1 and a half spoon cornflour, finely chopped coriander and salt to taste. Mix well.
6. Roughly grind a cup of cornflakes.
7. Mould the potatoes on your palm, place the prawns in the mould and close them to make them a patty. Then coat the patty with the cornflakes and shallow fry them.
8. Enjoy with chutney or ketchup.
