Kölsch is a German style beer that is among my favourites. Not complicated to brew and the end result is a balanced and crisp lagered ale on the dry side and very clean and refreshing with a hint of spicy notes. The Robobrew Brewzilla 35 litre system is used here however my methods could be used on similar homebrewing systems. NOTE: dry yeast can be used, see recipe comments below. Try it for yourself. Ingredients
4.5 KG Pilsner Malt
500g Vienna Malt
2 oz Hallertau Hops
Yeast for German style ale
(Escarpment Labs Kolsch Ale Liquid Yeast used, if dry yeast must be used, try K97, S-33, or US-05)
Basic Steps (see video for more)
Mash at 150F for 80 Minutes following a 10 minute rest (90 min total). 60 minute boil. Add 2oz of Hallertau at 60 minutes. Add one Irish Moss tablet at 15 minutes. Pitch yeast. Ideally ferment at 65-69F or a lower temperature than a typical ale, although this beer is forgiving if fermented in the 70-73F range.
