主料: 3磅牛仔骨 3 pounds LA Galbi (Korean BBQ Beef Short Ribs)
烧烤酱配料比例:
1杯红糖 (松松舀进量杯)
( 1 cup brown sugar (loosely packed)
1杯生抽 1 cup soy sauce
4大勺米酒
(4 Tbs rice wine (or burbon,rum,vodka )
2 大勺香油 2 Tbs sesame oil
4大勺味醂 2 Tbs mirin
1杯水 1 cup water
1小勺黑胡椒粉 1 tsp black pepper
8支葱 8 spring onion
1整头蒜 1 head of garlic
1个奇异果(实用大半个)1 kiwi (use half to 3-quarters)
心得:
牛仔骨浸泡在烧烤酱里, 每隔几个小时翻动一下
牛仔骨腌最多2个晚上,不要再久了。
奇异果有嫩肉的效果, 5磅牛仔骨用一个奇异果。 还有其它几种水果也有嫩肉的效果。
味啉 Mirin是调了味的日式米酒,和清酒接近, 但比清酒甜,酒精含量低。一般中国/亚洲超市都会有。 如果没有的话可以自己配, 方法简单。
自制味醂替代品 / How to make Mirin substitute:
*1/4 cup granulated sugar + 3 tbsp water, bring to boil,
*Remove from heat, add 3/4 cup sake (or white wine) gradually, and mix well.
