Today, I'm making kimchi at the request of Erdferkel.
Geotjeori: Geotjeori is a quick and simple kimchi preparation.
The halved napa cabbage leaves are not salted or brined, and the ingredients are simply mixed together.
Geotjeori is typically cut into bite-sized pieces, making it convenient for immediate consumption.
Geotjeori is characterized by its fresh and tangy flavor, resulting from the minimal fermentation process.
Geotjeori is often served as a side dish or incorporated into quick meals like fried rice or ramen.
Geotjeori provides a quick and refreshing kimchi option, while kimchi delivers a deep and complex fermented flavor.
Important Notes:
Don't Worry About Lack of Chili Powder: When initially mixing the seasoning with the napa cabbage, you may feel that there is not enough red chili powder due to undissolved salt. This is normal. As the salt dissolves, moisture from the radish and napa cabbage will be released, causing the napa cabbage to turn red.
Patient Mixing and Taste Adjustment: Mix the ingredients slowly and thoroughly. Once the napa cabbage is evenly coated and the salt has dissolved, taste the kimchi and adjust the red chili powder as needed.
Ingredients: 800g Napa Cabbage, 300g Radish, 6 Green Onions or 40g Chives
Condiments: 2 Tbsp Korean Sea Salt (Cheonilteom) or 1 ½ Tbsp Salt, 2 Tbsp Minced Garlic, 2 Tbsp Yuja Cheong or Orange Marmalade, 1/2 Tbsp Ginger Cheong, 7 Tbsp Coarse Red Chili Powder, more to taste(I added 10 Tbsp of coarse red chili powder.), 2 Tbsp Sesame Seeds
