@emiliac8480

The key to good Asian fried rice is to make sure each grain of rice is separated, seasoned well and not soggy. Asian short grain rice tends to be sticky and clumpy when freshly cooked, which is good to enjoy by itself but not ideal for making stir fried rice. Over night rice gets drier thus more suitable for stir fry.

American white girl here. I've always made rice the Asian way. I don't understand why so few westerners have a rice cooker. Until I found Uncle Roger's videos, I thought nearly everyone had one, but now I'm questioning all my friends and coworkers. It's true... most of them don't own one. That's a staple kitchen item that stays on the counter, along with the coffee pot and toaster! Why make it so difficult and unnecessary?? Also... I sit with the leg up too. Olive oil IS suitable for high temperature cooking, but i don't know what percentage (probably very small) of people know, that there's something called "refined olive oil", and it's smoking point is of a peanut, or sunflower oil. You can even fry with an extra virgin olive oil, but it has to be top quality and you won't find these in your typical market. I'm not Asian, i'm from Europe, so i haven't been eating much Asian food in my life compared to the other European cuisines, but i think the biggest problem with using olive oil for cooking Asian food is the taste it gives. It's very strong and it compliments Meditarreanan cuisine, not Asian. By the way, Jamie's use of olive oil everywhere, on everything, in every amount is a meme already, so i'm not surprised that he doesn't even bother using the proper oil, considered that he butchered the recipe anyway :D

Kinda get what Oliver meant by fried rice as a side dish. In Japan, while chahan can be ordered as a meal, it is more often than not just a side dish, because it isn't a fully nutritional meal. Japanese meals/dinners, whether outside or at home, usually consist of multiple dishes; a main with rice, salad or pickles vegetables and soup (most often miso soup). Chahan is usually served together with ramen, gyoza, mabou-dofu, or karage etc. Few people, except when pressed for time or money, would just serve up one big helping of chahan as a standalone meal.

@@homuramikazuki5086 Eh no. It's commonly sold and consumed in Japan as a side dish. It's actually more commonly sold amd consumed as a side dish than as a main dish, because again, fried rice is not a complete meal by Japanese standards.

I get what you're saying. In the Philippines, we don't usually eat fried rice alone because it's not a complete meal. We eat it with some other dish, but it is still the main dish. Some other food becomes the side dish. With us, anything with rice is the main dish
@hian
3 жыл бұрын
@@abolcayrmacararab3901 That's very different from Japan. Rice may be a part of a main course, but rice is not considered the main dish unless you're just eating Onigiri for lunch or something. Rice is to meals in Japan what potatoes or bread are to westerners. That is to say, if you order a steak, or a fish, or pretty much anything, you eat it WITH rice. You don't eat rice WITH steak. Chahan is an extension of this. You eat Ramen with Chahan. Or Gyoza with chahan. Or Mabodofu with Chahan etc. Of course there are single dish chahan meals, however, it just isn't very normal.

There are various types of olive oil. Extra virgin olive oil can have a smoke point of 400 °F which is on par with peanut oil that can go - depending on production method - from 350 to 450 °F. The type used for salads usually has a much stronger flavor and a much lower smoke point. So the low smoke point is a common misconception regarding olive oil. But if you factor in neutrality and cost, there are better and cheaper alternatives. The cost becomes really an issue when you have to import. Here in Germany I prefer rapeseed oil (canola) which has a smoke point in the range of 428 to 446 °F, is very neutral in taste and has a very (!) high amount of unsaturated fats. The unsaturated fat part is where many other oils suck - sesame is great, though.

3:31 You only wash the rice once? I don't know if that's gonna cut it. Usually it takes more than one wash to get the water to look clear. Great video, by the way. I love Uncle Roger. He's the reason why we're all getting through 2020 with laughs and smiles on our (sometimes masked) faces.

I'm white, and *I* know not to fry in olive oil! Yeah, chili jam is just what it sounds like - a jam made with chilies instead of strawberries or raspberries or whatever. Makes for good PB&J...but I wouldn't *cook* with it - especially with Huy Fong Foods just ten miles from my house (no chili-grinding tours this year - sad).

lol, I'm from the Pacific island and that's how we were taught to cook the rice. Wash the rice at least 3 times until water is pretty clear, then fill it with water up to first knuckle and put it on stove. After it boils, turn heat down to low until rice is done. Of course now we use rice cooker, easy, bc you don't have to watch the stove.

@Anna Lee, I am 1/2 Korean adopted as a baby, exported to USA.😎 I sit with my legs up, always have. When I make rice I don't use a cooker. I use a heavy saucepan, with a tight lid. I start on high as soon as it starts to bubble I turn the heat all the way down and walk away. Suddenly I remember my rice! It always is just finished. Not stuck to the pan. No water in the pan. :-) Ps. Your a very lovely lady.
