This is sooooo good! You'll want to eat it for breakfast, lunch and dinner; and, it's a perfect way to get rid of veggies in the fridge.
Ingredients
1/2 Cup Shredded Carrots
1/2 Cup Zucchini
1/2 Handful Mushrooms
1/4 Red Bell Pepper
Onions (Red or White)
1 Jalapeno
3-4 Green Onions (Sliced in 1" pieces)
Oil
Batter
3/4 Cup Flour
1/4 Cup Cornstarch
Water (Enough to make a pancake consistency batter)
1/4 Tsp Salt
Dipping Sauce
2 Tbsp Soy Sauce
1 1/2 Tbsp Rice Vinegar (White Vinegar can be substituted)
3-4 drops Sesame Oil
Pinch Red Pepper Flakes
1/4 Tsp Sesame Seeds
Directions
Slice all veggies and set aside
Prepare Batter by adding flour, cornstarch and salt. Pour in water slowly, making sure your batter is consistent to pancake batter
Add in your veggies and combine well
Heat oil and add mixture, flatten and spread out evenly in skillet
Cook until crispy, flip over and cook other side
Enjoy for breakfast lunch or dinner
