They look so yummy but it looks like a huge amount...maybe I’ll try half a batch first...waited to listen till the end you said two weeks to keep...that would be worth it. Are they soft or crispy?

It depends on how long you keep them in the oven. I would describe it as a medium crisp cookie. You can dip them in coffee, milk, tea, like you do biscotti.

It is a very big amount. You can do one of two things: either make half of this batch or, shake the whole thing, shape them and freeze the ones that you won’t be using immediately. Once they harden, place them in freezer safe bags and they will keep fresh for 2 months. Bake them as you need them. Make sure to freeze them unbaked. As far as the texture goes, they can be on the softer side if you bake them less and baking them longer and at a slightly lower temperature (325 f) will produce crisper cookies. I hope this helps!! I would say koulourakia are towards the softer side, rather than crispy. They don't have a crunch when you bite. My mum and aunties generally make huge batches at Easter. When you visit people you take some on a pretty plate with some red dyed eggs. You need a lot if you're distributing to friends and family etc. Many authentic Greek recipes will give you measurements for about 100 plus koulourakia. We're disappointed in our recipe if we don't get around 130 biscuits.

Great recipe! Love! but if I can just suggest one tip about the room temp. egg trick?? All u need to do is get a cup/bowl long, short whatever, then put ur eggs in, fill with hot tap water not boiling, and then just let the eggs sit for 2min. and girl u got perfect room temp. eggs ok!!! I do this all the time when I forget to take my eggs out for baking and my cakes and stuff come out perfect every time. You dont have to keep changing bowls, cause its stressful enough u gotta get them eggs just right, and moving around from here to there girl that would just drive me up the wall. O. M. G !!!! The Best Recipe!!!! I have searching & made 5 different batches in quarantine .. yours was the last ine I tried... I love them. Lemon zest & Anise I used. I also replaced baking powder for baking Ammonia... reminds me of my Thea's!!!! And can't thank you enough. I gotta get your cookbook!!!!

There much more baking powder per cup of self rising flour than there is in my recipe. If that's all you have, make a half batch and see how they turn out. If you have options, use all-purpose flour with the baking powder amount that is listed in the recipe. Hope this helps! xoxo
