Kuksi is a traditional Korean kitchen. Thin long noodles, egg crepes, vegetable salad kuksichumi, special cold broth kuksimuri, but meat or poultry is up to you a proper kuksi can be cooked without meat. In a hot summer day this appetizing meal with delicate asian taste and a variety of special vegetable salads will substitute for the whole dinner. It takes a bit more time than for average cold soup to cook kuksi but take our word it is worth it.

Ingredients:
• noodles - 300 g
• beef - 400 g (can change for any meat)
• white cabbage - 250 g
• 4 cucumbers - 250 g
• eggs - 4
• tomatoes - 300 g
• bell pepper - 1
• ground pepper - 1 tsp
• red chili flakes - 1 tsp
• garlic - 3 cloves
• red chili pepper - 1
• bulb onion - 1
• dill - 10 g
• cilantro - 10 g
• soy sauce - 100 ml
• wine vinegar - 3 tbsp (can change for regular 6%)
• sugar - 2 tbsp
• dried sweet paprika - 1½ tbsp
• salt - to taste
• vegetable oil - 2 tbsp
• sesame - 1 tsp
• water - 1 l
Preparation:
1. Cut the meat into strips, heat a pan and fry the meat until readiness. Then salt and pepper it to taste.
2. Cut the white cabbage julienne, chop up the cilantro and dill.
3. Put the cabbage into a bowl, add some salt, ½ tbsp of sugar, 1 tbsp of wine vinegar, ½ tsp of red chili flakes, ½ tsp of garlic, ½ tbsp of paprika, some dill and cilantro. Mix well and squeeze with hands until juice out.
4. Cut the onion half rings, the bell pepper into thin strips. Heat the pan and fry the onion for 2 minutes until golden brown. Add bell pepper and fry for another 2 minutes. Keep the pepper rather crispy.
5. Cut 3 fresh cucumbers lengthwise and in thin layers then.
6. Put the cucumbers into a bowl, add some salt, ½ tbsp of sugar, ½ tsp of garlic, ½ tsp of ground black pepper, ½ tbsp of paprika, some dill and cilantro and mix well.
7. Whisk 4 eggs, heat a pan well and make thin egg crepes over medium heat.
8. Roll the crepes and cut them julienne 4-5 mm of width.
9. Broth: grate 1 fresh cucumber and a tomato coarsely into a bowl, add some salt, the rest of dill and cilantro, 100 ml of soy sauce, 2 tbsp of vinegar, 1 tbsp of sugar, ½ tbsp of sweet paprika, ½ tsp of chili flakes, 1 l of cold water and mix well.
10. Boil 2 l of water, add 1 tsp of salt and cook noodles according to package instructions. Wash the noodles with cold water, drain and pour in 1 tbsp of oil so that noodles won't stick together.
11. Cut the red chili pepper into thin rings.
12. Put the noodles into a serving bowl, lay around a circle the white cabbage, the fried onion and bell pepper, the cut egg crepes, the meat and the cucumber salad, pour in the broth and sprinkle with chili pepper rings and sesame. Kuksi is ready. Enjoy!
