Kurdish okra stew, this time without meat. I personally like to leave the meat out of many of the stews, because I don't think it compromises on the flavor. And you can easily enhance flavors by using vegetable, chicken or beef stock. In this one I've kept the recipe super simple, and you can switch it up any way you like to.
It's really simple and quick to make. 30 minutes maximum from starting to serving it.
Ingredients 4 servings
400 g frozen okra
5 tomatoes
2 tbsp tomato paste
3 garlic cloves
1 pinch citric acid (or 1 tbsp lemon juice)
1 piri piri pepper (optional)
salt and black pepper to taste
2 tbsp olive oil
