龍蝦三食
1)蒜蓉牛油龍蝦尾

材料:
波士頓龍蝦2隻
牛油15g (for煎香麵包)
牛油果1個
芒果半個
青檸1粒
檸檬¼ 個
*龍蝦沙律醬料:
練奶1湯匙
沙律醬2湯匙
黑椒適量
蒔蘿適量
*龍蝦尾醬料:
蒜頭5粒
紅辣椒1條
牛油20g
蕃茜Parsley 適量
Paprika 適量
蒜蓉牛油龍蝦尾做法:
1) 首先以200度預熱焗爐。
2) 把20g牛油隔水煮溶, 蕃茜, 蒜蓉及紅辣椒切碎,放入牛油溶液內攪勻。(紅辣椒可隨個人喜好放或不放, 如想同時處理兩種味道, 可先塗沒有加紅辣椒的牛油溶液,然後才後加辣椒在剩下的牛油內)。
3) 把龍蝦頭及身剪開,從蝦身中間剪開,在近尾部位置左右打橫剪一下, 取出蝦肉並放於蝦殼上 (注意不要剪斷蝦肉)。放適量鹽,黑椒於蝦肉底及面上, 如喜愛辣的可加Paprika, 再掃上蒜蓉牛油。把檸檬切件放入龍蝦殼內, 放入焗爐內以200度焗15分鐘。
龍蝦包及龍蝦他他做法:
4) 準備一煲熱水,把蝦頭及鉗放入滾水內煮8分鐘。
5) 牛油果去皮及核然後切粒,加入青檸汁以防變色,再加入加適量鹽,黑椒及少少橄欖油攪匀。
6) 同樣地芒果去皮起肉切粒,加入青檸汁以防變色。
7) 取出龍蝦頭剪開蝦鉗放入冰水內浸,目的較易拆肉。
8) 龍蝦頭及鉗拆肉後把較大的蝦肉剪細, 加入2湯匙沙律醬,1湯匙練奶,適量鹽,黑椒, 青檸汁及蒔蘿攪勻。
9) 把15g牛油溶於鍋中,放入熱狗包煎至金黃色, 在包身中間切開,把沙律菜放在麵包中央, 再放入龍蝦肉。
10) 把圓模置於碟中,先把牛油果舖於底部,中間放入龍蝦肉,頂層放芒果粒, 壓實以固定型狀, 最後以火箭菜作裝飾。
Tips:
1) 芒果可選擇較生,味道較酸的比較適合配搭海鮮。
2) 不要浪費剩下的龍蝦腳及殼, 可留起用來煮湯做其他菜餚。
3) 龍蝦沙律可以不用時籮而改為選擇用parsley 或者蔥花代替, 這兩款配菜都很適合用於龍蝦沙律!
4) 雖然用了很多牛油去煎麵包, 看似很不健康, 但此步驟是不能決少的, 有畫龍點睛的作用,大家試了就會明白!
5) 因為同時間要處理3個餸, 時間掌握要好好控制, 在焗龍蝦尾時因我只顧起龍蝦肉而忘記從焗爐取出, 所以令到龍蝦肉縮少了, 變得比較乾身。如在家處理,步驟可以先處理好冷盤, 然後放龍蝦尾入焗爐,而在焗的時候才煎麵包。
Cook Lobster in 3 Ways
1) Garlic Butter Lobster Tail

Ingredients:
2 Boston Lobsters
15g butter (for pan-fried bread)
1 Avocado
1/2 Mango
1 Lime
1/4 Lemon
*Lobster Meat Mixing:
1 tbsp Condensed Milk
2 tbsp Salad Dressing
Black Pepper
Dill moderate amount
*Lobster Tail Sauce:
5 cloves Garlic
1 Red Pepper
20g Butter
Parsley moderate amount
Paprika moderate amount
Garlic Butter Lobster Tail
Instruction:
1) Preheat the oven at 200 degrees.
2) Dissolve 20g of butter by steaming in the hot water. Chop the parsley & garlic finely and dice the red pepper, then put them all together into the butter and stir well. (If you also want to make the spicy flavor, you can add the red pepper to the remaining butter).
3) Separate the lobster head and body and then rinse. Cut the lobster body from the middle vertically and then cut the end of the body close to the tail horizontally. Take out the lobster meat and place it on the top of the shell (bear in mind not to cut it off). Put a pinch of salt and black pepper on both sides (top & bottom) . You can add paprika if you love spicy, then spread with garlic butter. Put the lemon into the lobster shell and bake at 200 degrees for 15 minutes.
Lobster Buns & Lobster Tartare
Instructions:
1) Prepare a pot of hot water, cook the lobster head and claws for 8 minutes.
2) Peel and core the avocado, dice and add lime juice to prevent discoloration. Put a pinch of salt, black pepper and a little bit of olive oil and mix all well.
3) Peel the mango and cut it into cubes, add lime juice to prevent discoloration.
4) Take out the lobster head, cut the claws and soak them all in ice water.
5) Extract the lobster meat from the head and claws, cut the meat in small pieces and add 2 tbsps of salad dressing, 1 tbsp of condensed milk, a pinch of salt, black pepper & dill and lime juice and mix them well.
6) Put 15g butter into the pan and fry the bun until golden brown, cut the middle of the bun and then put the vegetable inside and then lobster meat.
7) Place the round mold on a plate. Firstly, put the avocado on the bottom layer, then lobster meat in the middle, and finally put the mango cubes on the top layer. Slightly press to hold and fix the shape. Garnish with rocket.
Tips:
1) Unripe mango is a perfect match for seafood. It brings out the sour flavor which matches with the lobster.
2) Don't waste the lobster's feet and shells, it can make lobster soup for other dishes.
3) Parsley or green onion can be used to replace the dill for the lobster meat mixing.
4) It seems unhealthy using 15g butter for only frying the bun, but you can try how tasty it is after your first bite.
5) It is important to control the time when you manage 3 dishes at the same time. When I was baking the lobster tails, I only paid attention to extracting the lobster meat and forgot to take out the lobster tails from the oven when it was done, so the lobster meat was shrunk and dry. If you are cooking at home, you should prepare cold cuts first, then put the lobster tails into the oven, and then fry the bread during baking.
