For years I resisted adopting a plant based diet because I thought vegan food was plain and bland and boring-and I love spicy, exciting food. It wasn’t until the past couple years I could make the leap, and a lot of the reason that I was able to finally do it is the genius of a new generation of chefs like Raul Medina of La Venganza, The Vegan Taqueria in Oakland who are proving that vegan Mexican food can not only be AS delicious as animal-based food, it can be MORE delicious, MORE exciting, and way, way more fulfilling.
