In the Balkans we ferment everything - carrots, cauliflower, cucumbers, cabbage, you name it. Delicious treats especially during the winter season, where there is a lack of fresh produce. Cheers from Bulgaria 🇧🇬

They’re good but knock me out of ketosis. I’ll take out half a carry from my homemade fermented carrot jar, cut it up, and put in a salad. But it cannot be a snack. Too much sugar.

@@Jay37_bakethey have a lot of sugar . I tested with a blood glucose monitor. I’m better off eating a piece of chocolate with monk fruit extract than I am a small slice of carrot. Do a basic google search on the sugar content of carrots.

@@Jack-zj1ug b/c i need to be on an anti-inflammatory diet and the most anti-inflammatory diet is ketogenic (no sugar, very low carb, lots of fish, garlic, ginger, turmeric). Non-keto diets (using glucose as primary source of energy) creates reactive oxidation species, which is inflammatory. Keto can also be inflammatory if you eat junk with it (fake sugars, seed oils), but a well formulated anti-inflammatory keto diet is as anti-inflammatory as it gets. And i feel the difference and got off about 5 different medications because of my diet. Oh, and as a side-effect, i lost 35 lbs of fat without changing my exercise routine. But losing weight is jut a side effect. The goal was to eliminate my chronic inflammation, which is what the diet does.

When choosing salt for fermenting vegetables, there are two very important things to avoid: anti-caking agents and added iodine. The addition of iodine can inhibit beneficial bacteria and disrupt fermentation.
