Laksa soup components for cooking for 4 people.
To prepare shrimp broth, you need:
• 300 g of peeled shrimp heads and shells
• 1.5 liters of clean water
• 35 ml of olive oil
Fry the heads and shells in a pan with oil until orange, cover with water. Bring to a boil, remove the foam and cook for 30 minutes. It is worth remembering that salt and spices should not be added to the broth during cooking.
Preparation of noodles. Rice noodles are pre-soaked in warm water for 30 minutes. Immediately before serving, dip the noodles in boiling water for 30 seconds and immediately rinse with cold water to stop the cooking process.
Lax pasta. For self-cooking you need:
• 10-20 pods of hot chili pepper;
• 1 galangal root;
• 1 tbsp. turmeric powder;
• 5 pieces of dry cayenne pepper or chili pepper;
• 15-20 coriander seeds;
• 300 g of shallots;
• 1 tbsp. shrimp paste;
• 100 gr. peeled small shrimps;
• 10 pcs. peeled macadamia nuts or cashew nuts;
• 50 g of oil and 100 g of clean water
Cut into pieces and grind the solid ingredients to make it easier for the blender to work, and beat everything until the mass is homogeneous. Laksa pasta is ready.
Preparation of components for soup.
• 400 ml of coconut milk;
• 2 squid carcasses;
• 400 g of squid tentacles;
• 16 pcs. large shrimps;
• 1 pack of exotic molluscs in shells 400 g.;
• 12 pcs.small fish balls
• 300 g of cleaned mussels;
• 300 g of raw tofu;
• 3 tbsp. olive oil;
• soy sauce instead of salt to taste;
• lemongrass root;
• cilantro and lemon;
Shrimps are cleaned from the heads and shells, which will be needed for the broth. Squid carcasses are cut into rings. Clams are cleaned from the shells.
Tofu cheese is fried in vegetable oil to a brown crust. Squid tentacles are dipped in boiling water for 1 minute, and washed under cold water, the dark skin is removed with the fingers. Then leave for 20-30 minutes. in shrimp broth, during its preparation, and cut into wide strips before serving.
All ingredients are laid out separately.
Cooking soup.
Heat olive oil in a pan and fry the Laksa paste in it until it changes color to a darker color, about 15 minutes, add the strained shrimp broth to the pan. Next, without stopping to stir, pour in the coconut milk, which should be shaken well beforehand. Add lemongrass and bring to a boil.
Add fish balls, cut into pieces of tofu cheese to the soup. Add soy sauce, taste for salt. Bring to a boil, put a net with clams, shrimps, mussels in it. Cook for no more than 1 minute.
Laksa soup is served in a deep plate with high walls. Noodles are placed on the bottom, shrimps, clams, and chopped tentacles are arranged along the edge. Place fish balls and tofu cheese on top. All that remains is to add chopped cilantro, squeeze a few slices of lemon or lime into the rings. All components are poured with warm broth.
According to your taste, you can add more coconut milk, more lemon, water or soy sauce.In any case, it is very tasty.
