Coming from Texas and now living in the Middle East, I have learned to cook a lot of lamb. Smoked lamb shank and shoulder is amazing. I am using a homemade drum smoker. Another favorite is smoked beef shank or Oso Bucco. I would love to see you smoke a whole beef shank.

Harris Teeter sells these should chops all the time.they are quarter inch think filled with little tiny bones they want 10 bucks a pound and are junk! If you can't get nice chops like Malcolm, sub slices of boneless leg of lamb and use the exact same procedure. You will be glad you did!

Peter Dimitrovski only complaint I got, was that I didn’t make enough for later, the lamb was so tender, it felt like it melted in your mouth.
