Lasagna is by far the undisputed hit of Italian cuisine, on a par with such "stars" as pizza, spaghetti and risotto. It is based on durum wheat dough, which is first dried and then boiled or baked and laid out in layers, interspersed with various fillings from minced meat, vegetables, mushrooms with the addition of béchamel sauce. An obligatory ingredient is grated cheese (ricotta, mozzarella, parmesan), which is also baked in the oven until golden brown.
For the first time, lasagne was baked in the vicinity of the city of Bologna, from where it began its triumphant march through the cuisines of the whole world. Initially, lasagna was put into the oven in a special frying pan without a handle. And it consisted of several layers of thin dough stuffed with ragout and Parmesan cheese. Ligurian gourmets have added sauces to lasagna, including their favorite pesto. Pounded spinach was sometimes also added to the paste itself, which made it turn green.
