The meme that there is only one correct way to make each traditional Italian dish is getting really old. Italy is a very big country with people in the north being very different culturally than people in the south. I doubt that there is only one way to make lasagna or pizza or spaghetti carbonara. And if there were only one official version it would actually be saying something bad about Italy. Italian cooking should be like Italian politics: do whatever the eff works for you even if it effs everybody else up!

I made this for my family last weekend!!! To save my time(and sanity) I made the bolognese the night before, and only had to assemble everything the next day. It was simply the best thing I ever made. Truly fantastic! Thank you so much, this is the first recipe of yours that I did, and it turned out fabulous

OMG I love this channel and love this Bolognese recipe! Made it tonight for my 3 boys (ages 2, 3, and 5). The sauce was awesome (used moose burger) but I added two cans of tomato sauce at the end and mixed it in with a pack of elbow macaroni. They scarfed it down and had seconds. This is not the first time I've tried replicating one of your recipes and I've yet to be disappointed. Thanks from Alaska (your real Canadian neighbor).

I always add sliced mushrooms with spinach. The flavours complement so well. I also add a beaten egg or 2 to the cottage cheese mixture.

Having some more sophisticated dishes in your channel like this one is welcomed, at least in my opinion. Many of the people watching probably aren't making this stuff anyways. The humor, the excellent looking food, beautiful atmosphere, and camera work/editing make this channel stand out from the rest. Introducing some more labor intensive dishes will let you spread your wings as a chef, and give you no shortage of recipes to display. I'm looking forward to making this dish myself. Maybe you'll do Seafood Paella someday? Hope so. Thanks Sam!

I made this bolognese and it was really good. But I do recommend two simple changes: 1) use a mix of 50/50 ground beef and ground pork and 2) either first brown the meat at a much higher temperature by itself in the pan to caramelize and sear it, then remove from the pan before sauteing the soffritto, or brown it in a separate pan before combining with the sauteed soffritto, and then carrying on. These are small changes, but really make a big difference in the flavor. Otherwise this is a great and easy bolognese.

I’m way behind so I doubt you ever read this. I do bbq competitions but you channel now how’s me wanting to cook inside as well as out. Hope you won’t be mad at me , which I know you won’t, but I’m also add some leftover smoked brisket to the sauce. Can’t wait to see how this turns out. Thanks guys

I made this today (four-and-a-half hours), on my birthday, for my mom and sisters and sister's boyfriend. He shares my birthday. They loved it. He loved the red pepper flakes, and my sister loved the spinach, which I put on top for color. I put in a cup of pinot grigio instead of vermouth. Thanks for this, especially during the quarantine.

I just discovered Sam and this channel 2 weeks ago. This is the first recipe that I tried. I couldnt find it in comments, but the 375 for 30 minutes is horse s***. I kept mine in at 350 for 1 hour and it was perfect

I've sent this video to my wife (I'm working away) who is 100% Marche italian, for her and her mum to comment on. I think, as the comment below says, she will say this is about as much Lasagne as is fish and chips (I'm english and apparently f&c is italian of course) but, that doesn't mean it isn't a great dish. Try a pinch of nutmeg in the sauce, and omit the canned tomatoes for tomato puree, about 10 oz. You're looking to make Tuscan ragu rather than Bolognaise. One or two drops of Worcestershire sauce, fish sauce, and even soy sauce will add some complexity. Also be sure to add some lemon zest near the end of the sauce braise. Let it sit overnight before you cut it. Just heat it slightly in the oven about 30 minutes prior.

When it comes to adding tomato paste, you get more flavor out ouf it if you put it in before the can of tomatoes. Mix it up with the meat and heat it up until it gets a red oily texture. The sugar in it caramelizes and the tomato flavor sinks into the meat.

Samola my cook buddy, try this... next time you have leftover pot roast aka chuck roast, get a meat sauce simmering and toss in the leftover roast. Let it bubble and hour or two, untill the roast falls apart and serve over your favorite pasta .... prepare to be amazed!

You could install one of those roll out camper shades on that work space to help light deflection. Easy install. You could put one out the back too for rainy days. Not a great fan of cottage cheese but i'll give it a go, makes a change from normally using cream cheese. With the meat sauce i normally make 3-4 litres about 1 US gallon and freeze the extra in flattened ziploc bags for quick freezing and defrosting. Thank you for the video take care and God bless.

I've always used cottage cheese in my lasagna. It's delicious. I love sauteed spinach with garlic in olive oil and balsamic vinegar. The only thing I don't like are the noodles you used. I didn't like the no taste of them and they're too thin.
