この表現に関して、何度勉強しても結局理解できない難しいものです。ただ、アメリカ人の友人は、That works/ Sounds great などでしか、返事は来ませんし、英語で喋っている間にもほぼ今回の表現は聞いたことないです。英会話の先生(アメリカ人)は、この表現を使う時は、やはりなんかそっけない感じの時に使っています。

大変、勉強になりました。私からも、一つアドヴァイスを差し上げましょう。”Let's say I'm at the restaurant, I finish my meal and the waiter comes by.”のsayを「言う」と直訳する事はできません。何をおっしゃってるのか理解は出来ます。でも、こういう場合は、「・・・ウエイターが来たとしましょう。」と言うのが、自然な日本語です。この「しましょう」は、「~だと仮定しましょう」の略式だと考えると分かり易いです。
My experience, which is a bit similar, is . . . When I lived in Kyoto, I used to ask foreigners, "Are you lost?" Their answer was, at that time, " Thank you." Its sound is . . . " I'm OK. I can do something without your help." . . . I have been learning English in Japan for over ten years. My teachers are native speakers, not Japanese. The apps I use mainly are "DeepL," and "Grammarly." And iPad Pro 12.9 inches.
It's OK=結構です OK=いいよで大体いいと思います! That Worksも「いいよ」になります。

When asked "Can you do wednesday?" - "Perfect!" sounds a little strange, but we will understand what you mean. Perfect can be used as a response, but in other situations. It doesn't sound rude or anything. - "Super!" is not something we say in America in any situation.

In the first case, if she answers with Yes first, it does not make the misunderstanding? How about just ”OK“ or “I am Ok.”?

When asked "can you do wednesday" - If you say "Yes" or "OK" that is fine. - If you say "Yes, it's OK" then it's fine but it just sounds a little strange (not something we would say.) - "I am OK" sounds weird and could be a bit confusing. I'm OK is closer to 平気です。

Hello! Thank you for your question. In many cases, you can say either one -- they're used interchangeably; however, there is one difference I can think of: it's okay can be used in this format: "it's okay to [verb]." (〜してもいい、〜しても大丈夫). For example, "it's okay to take some time off if you're stressed." But we don't say "That's okay to...."
