Lebanese Chicken Fatteh | Tastes Delicious |
Ingredients
For marination
Boneless chicken - 500g
Salt- 2tsp
Red chilli powder - 2tsp
Oregano or any other herb of your choice - 2tsp
Coriander powder - 2tsp
For cooking the chicken- 2tbsp oil
For garlic yoghurt
Yoghurt - 500g
Grated garlic - 2tsp
Salt - as per taste
Sumak (optional) - 1tsp
Lemon juice - 1tsp
Chickpeas (soaked overnight and pressure cooked) - 1.5 cup
Medium sized Pita bread - 3-4
Roasted pine nuts - 1/2 cup
( We couldn't get pine nuts so we substituted it with almonds)
Chopped coriander or parsley - a handful
Pomegranate seeds (optional) -1/4 cup
Clarified butter or olive oil- 2 tbsp (for tempering)
For deep frying Pita - 8to 10 tbsps oil
Method
• Marinate the chicken with salt, chilli powder, chilli flakes, oregano/ thyme/ or any other herb of your choice and coriander powder and leave it aside for at least an hour.
*Cut the pita into small pieces and deep fry them.
( You could shallow fry or airfry as well )
• Heat oil in a pan and cook the chicken pieces.
• Cut the chicken into small pieces once it's cooked.
• Take a large bowl and add thick yogurt, grated garlic,salt,sumak and lemon juice.
• Give it a good mix and put it aside.
Assembling
• Take a dish and arrange the pita crisps to form the bottom layer.
• Now spread the chickpeas along with a little quantity of water in which it was cooked.
• Spread the chicken chunks and chopped almonds.
• Layer it with garlic yoghurt.
• Heat clarified butter and pour it onto the yoghurt layer.
• Garnish it with some pomegranate seeds and chopped coriander or parsley.
• Have it immediately to relish the crispiness of pita along with the succulent chicken.
