Jane thank you! We just had "spring rice a la Jane" for lunch. I had cooked bacon, 1 last winter leek, frozen peas, and arborio rice. I cooked 2C rice in 4C water in my instant pot. While that was going, I sauted the leeks, then added the bacon. Just as the rice finished, I put about 3/4C frozen peas in the pot (off the hob) and put the lid back on. We had the plain rice, topped with the peas, leeks, bacon and grated cheese on top. Took about 20 minutes to cook. Worked! My DH liked it so much he told me to make it again -- and I will. Thanks!

We love risotto at our house. Sometimes I make it with balsamic vinegar instead of white wine and add in peas and leftover rotisserie chicken if I have it. I grow leeks year round, so they are often an ingredient in my cooking. Yummy.

Here in Nova Scotia the prices on everything, especially food, has gone up very high. My vegetable garden this year is going to be much bigger than last year. Like you it was when I was a child that I last saw cheese with a rind. It was at our local grocer, Burrels, and it was lovely to see. In the shop sugar was weighed into blue paper sacks and biscuitsxwerecdidplayed in a stand of transparent bins. You chose what type and weight you wanted. Also there was a small bin of broken biscuits that could be bought at a cheaper rate. Niw the broken biscuits are all in the packets.😂

Thank you for this recipe. We love risotto, haven't made one in ages. I have leeks sliced in the freezer, also some left over grated parmesan, both bought on offer, and I always have frozen peas. I love the creaminess leeks can add to a dish. I picked up some reduced price streaky bacon from our butchers last week and was pondering putting that in the freezer, but now will keep out. This will be our Monday dinner, thank you x

Our temperature dropped about 30 degrees and risotto is on my menu tonight. I have a little leftover grilled chicken and fresh asparagus out of the garden. Risotto is my go to when I am stressed. Helps me relax. No stress tonight, but just wanting a comforting warm meal. Thank you for your videos

Here’s what I discovered by accident and now use this method for all kinds of recipes which are usually simmered. Get everything in except those you’d usually add at the end. Get the heat up for a couple of minutes, lid on obviously, then heat off. Leave for 30 minutes and everything steams. I initially discovered this with gas, but electric hobs are even better as it takes the time to cool down, so still applying some heat. Soups, stews, pasta sauces, curries. They need a quick blast before serving, but this uses minimal energy. Far less than simmering times. I discovered this after taking a phone call and turning off the heat to the risotto and adding the lid. It was a long call and when I removed the lid there was one cooked and creamy risotto 😊

Wow Jane have you been looking in my fridge 😊. I made leak and potato soup yesterday and I have one leek left in the fridge, frozen peas in the freezer, bacon bits in the freezer so guess what I will be making tomorrow. Great video and great frugal advise about adapting a recipe to fit what you have or what you can afford to buy. I make risotto but have never put wine or cheese in it before but I will do this time. Had a busy day today so my meal this evening was left over chicken, left over carrots and swede, mash and thick opinion gravy. Frugal and yummy made out of left overs.

I love risotto and find you can add whatever you have lying around, especially veg wise - I usually have peppers, mushrooms and like you peas that are added, but to be honest rarely add cheese. It is so adaptable and cheap. I buy paella rice when we are in Spain as it is far cheaper than arborio rice in UK but also you can use short grain (ie pudding) rice, or even pearl barley which is also cheap and nutricious.

The farmers markets here are so expensive so I get a box here but I pick it up at the local garden centre so that’s a temptation in itself! Love a risotto. Instead of white wine, I keep a bottle of white vermouth, couple of euros from Lidl, it keeps for ages and no need to finish up a bottle of wine for the sake of a cup in the food.
