I have celiac and I’m intolerant to dairy, grain flours and sugar. I thought I’d never be able to have dessert again. Thank you so much for all these wonderful recipes. I absolutely LOVE lemon cake so I just made this one. I substituted heavy whipping cream with full fat coconut milk. It turned out great! Thanks again. Now I just have to pace myself with the dessert!

I’ve been wanting to try your chiffon recipe since i saw the other( with the fruit), I chose this one since I love lemon and it gives me something to compare more clearly as I have a non-keto lemon chiffon recipe that I’ve used for years. I didn’t use avocado oil become I forgot to buy it. Used butter instead which may have effected the end result? Not sure. I used an 8 inch springform because I didn’t have a 6in tube, mine is 10inch. Which explains why mine wasn’t as skyhigh. I’m sure if I made it with 12 eggs, it will be more like I expect in terms of volume or I could buy a 6inch tube pan, lol. That said, the cake did stick to my pan, it wasn’t a complete disaster but next time I’ll coat it with parchment. I’m guessing an aluminum tube pan is the difference here. In terms of taste and texture, it’s amazing! Much better than any keto cake in general and the best chiffon cake since baking an non keto chiffon cake. I consider myself a chiffon expert as I’ve been baking them for over 40yrs! This recipe makes me miss baking a chiffon cake a little less. That said, have you tired using Xanthan gum? And use all almond flour instead of coconut ? I only ask because I can slightly taste the coconut flour and I’m not fond of it. I’m not sure if I can or should add more lemon extract or sweetener to tamp down coconut like the flavor/after taste. With regard to the condensed glaze, I think I will add the vanilla and lemon extra after it reduces to the thickness I like. It seemed like the vanilla and lemon severely decline due to the heating/reduction. I’m only picking nits because I have an obsession for chiffon cake, ultimately your recipe is awesome ! Thank you for showing me the way!!

@@paulwiffin2452 that’s 100% my experience. I’ve played around with this recipe quite a bit...I’ve never been able to achieve sky high chiffon like that made with cake flour. At first I thought it was me...but using my tried and true recipe got what I expected. I’ll keep experimenting but at some point I have to accept that the ingredients in a keto cake will never give you the same results as a “regular” one.

My favourite thing to drink right now in the morning is your coffee jello (which I also made chocolate and matcha versions before, perfect for summer and came out great). And currently, in my fridge, I have the yogurt cake from your recipe that I love so so much. I'm for sure gonna do this lemon chiffon cake when I finish the yogurt cake. I am making this later this week for my husband's birthday. Question: When making the icing, do you lower the temp when adding the extracts? and what temp to you have the stove when you are stirring until it gets thick? That would help me out a lot. Thank you!

Hello Debra! You can make the condensed milk in medium low heat. You don’t have to lower the temp when adding the extracts. Just continue stirring until it thickens (20-30mins) ❤️😊

Hi Irish! Yes, you can use regular cake pan just line the bottom with parchment paper and just leave the sides so that you can invert the pan as soon you take it out from the oven.

Line Chouinard hi Line! You can substitute lemon juice or white vinegar if you don’t have cream of tartar. It acts as a stabilizer in recipes that require whipped egg whites, such as meringue, angel food cake, chiffon cake and soufflé. When whipped, egg whites (also known as albumen) can swell up to eight times their initial volume.The acidity of cream of tartar helps egg whites achieve their full volume potential, and stabilizes them by helping hold in water and air. 💕

Last week I use this recipe to make a geniuses sponge cake OMG I wet the layers with a syrup with rum and thick layers of Crème Pâtissière and a very thing layer of peaches (my little sinn 🫣) what can I tell you friend…..it was a dream. As you can see I keep myself very active 😊. I wish I could cook more but you know….the sweet little boy.

I notice your recipes tend to use almond flour. Any particular reason? Is it ok if I substitute coconut flour for almond flour in your recipes? It's because i find it easier to find coconut flour over here, than almond flour . ☹

Hello Yvette. Coconut flour can replace almond flour in most recipes. However, when making substitutions, the properties of each of these flours have to be taken into consideration. Coconut flour is particularly absorbent and sucks up a lot of moisture so you may I have to adjust the rest of the liquid ingredients so technically it’s another recipe.❤️

Hello Sophie, butter will not work in chiffon cake because butter will most likely solidify when mixing it with your egg whites. Feel free to use any type if oil you prefer.

An observation... the recipe calls for THREE tbsps granulated erythritol or 35 g. However, 35 g of erythritol is the equivalent to TWO tablespoons, not three. Should I go by tablespoons or grams in this case?

1 cup of erythritol is 200grams 1/2 cup is 100g 1/4 is 50g And there is 4 tbsp in 1/4 cup so if you’ll do the math 1 tbsp is approximately 12.5 and 12.5x3 is 37.5. I always use and suggest to use a food scale for more accurate measurements. Also you can always adjust the sweetener in any of the desserts acdg to your taste. ❤️
