Cake ingredients:
- 2 medium eggs
- 170g butter
- 170g caster sugar
- 170g self raising flour
- Zest of 3 lemons
- Juice of 1 lemon
Topping ingredients:
- Juice of 2 lemons
- 50g caster sugar
Preheat the oven to 170°C
Cream the butter and sugar
Add eggs and whisk
Sieve in flour and fold gently
Add lemon zest and fold
Add the juice of 1 lemon and fold
Spread into your baking tray
Cook for 15mins
In a saucepan add the juice of 2 lemons and 50g sugar
Mix on a low heat for a few mins
When the cake is finished poke 50+ holes into the top
Pour/spread on the lemon sugar mix
