Lemon posset tart :
23 cm tin /9 inch
Ginger Biscuits : 150g
Melted butter :50g
Double cream:500ml
Castor Sugar:100g
Lemon zest-3 lemons
Lemon juice :50ml
Method :
•In a sauce pan add the double cream and sugar and mix well ..then keep it on stove and bring to a boil
•Add lemon zest and boil for another 2 minutes
•Remove from heat and strain and let it cool for 15 minutes
•Then Add the lemon juice and whisk it nicely
Lemon Posset filling is ready
For the tart base :
•Add the ginger biscuits in a mixer jar and grind it to a powder .
•Empty the biscuit powder in a bowl , add Melted butter and mix well .
•In a 9 inch tart pan , put the biscuit mixture and spread it out ..press using the base of a glass/ bowl to level it and set it in the tart pan
•Refrigerate for 15 minutes to set the crust
Once the biscuit crust is cooled and set pour the lemon posset filling over it and let it set in the fridge for 2-3 hours .
