Ingredients:
1 kg pork neck
50 ml apple cider vinegar
1 can (400 g) peeled tomatoes
500 g colorful bell peppers
1/2 bunch parsley
1 chili
1 onion
1 tsp sweet paprika powder
1 tsp hot paprika powder
2 garlic cloves
3 bay leaves
Olive oil
1 tsp pepper
1 tsp seasoned salt
1 tsp baking soda
15 g salt
Instructions:
Cut the meat into bite-sized pieces. Finely dice the onion and chop the garlic. Place everything in a bowl and mix with salt, paprika powder, bay leaves, and apple cider vinegar. Mix well, vacuum seal, and marinate in the refrigerator for 24 hours.
After the marinating time, remove the bay leaves and thread the meat onto skewers. Set aside the marinade.
Wash, core, and dice the bell peppers. Heat olive oil in a pan, sauté the chili. Add the onion marinade and bell pepper cubes, sauté for about 10 minutes until the peppers are soft.
Add tomatoes, seasoned salt, and baking soda. Pour in 300 ml of water and let it simmer for 20 minutes.
Grill the meat on a charcoal grill, brushing with olive oil. Add the cooked meat to the vegetables in the pan, simmer for another 10 minutes. Add water if needed.
When the water is reduced, season with pepper. Transfer to a clay dish, bake at high heat for 10 minutes until a crust forms.
Sprinkle with parsley and serve in the clay dish with white bread.
