👩🏻🍳 INGREDIENTS
* We used 3 very large Armenian cucumbers- But 2 pounds of English cucumbers will work.
* 1 TBSP. Coarse salt/ 2 TBSP. sugar
* 1/2 Cup Gochugaru
* 1/2 Cup Water
* 1/4 Cup Rice Vinegar
* 2 TBSP. Sesame oil
* 2 TBSP. Fish sauce
* 2 TBSP. Grated garlic
* 1 Asian pear
* 1/2 onion
* 1 Cup Chinese chives
* 1/2 Cup Carrot
* 1/2 Cup Kohlrabi(optional)
✍🏼 LET’S MAKE IT
1.) Rinse cucumbers & Slice down the middle, remove seeds, chop the way you like them. Put into large bowl, add 1 TBSP. Of coarse salt & 1 TBSP. Sugar. Put into refrigerator for 30 mins. Rinse and drain.
2.) In a separate bowl make your paste by blending Asian pear with half of onion. Add into bowl- then Add Gochugaru, fish sauce, garlic, rice vinegar, water, 1 TBSP. Sugar & sesame oil. ADD CHOPPED Chinese chives, cucumber, carrots & kohlrabi.
3.) Use gloves to mix everything with your hands. Put into container, leave in the counter for 2 hours, refrigerate for an additional 24 hours, and enjoy!
