I do have a knife similar in design and shape to yours. You'll find it works well with a rocking slice, usually a push cut rather than a pull cut. It's all about what works for your for a particular task though, as how you use a blade will differ from one ingredient to another. A sharpening/honing steel will be great for keeping a daily edge on your chef's knife. it doesn't work by removing material (which is what the carbide push/pull sharpeners do, and what sharpening stones do) but by straightening the edge where it has been pushed sideways enough to make it harder to cut. To learn how to use, get lessons from a willing butcher, or there should be lessons available on YT etc. I've had my blade for about thirty years, and it is still very close to its original profile as I generally don't sharpen, just give a quick strop with the steel as needed. You may also want to drop by a knife (or cutlery, as it is known in quite a few trades) store and pick up a cheap edge guard. It will make storage safer and prevent other things on the shelf or in the drawer from knocking that edge around. Thanks for the videos, I'm actually enjoying their lack of scripted polish. Not saying those are bad either, but I am enjoying the difference. Keep on keeping on :)

You're right, the thing that causes the bounce-back and keeps the dough from breaking as you roll it is gluten. I bet that was real tasty though. I work at a restaurant where the owners have serious gluten intolerances and GF stuff is not always easy to make because of the difference in the way things react when mixed in a dough or batter. No reason it can't be awesome though, all of the stuff they make is amazing. Thanks for sharing. I like that your channel is growing, I agree that it's a lot to do with your humility, vulnerability and sincerity. You're open and honest and that's compelling. Have you ever made a GF lentil burger patty with cooked lentils and shredded carrot? There are some really good recipes around with nice middle-eastern seasoning profiles that you might like. It could be a two-part burger event right after you make some GF buns.🙂

In another video you said you don't have passions. But you do! Cooking (and gluten free). This is huge - whether from the point of view of making money out of it as a job / business and / or if you become a wife / mother etc. Cooking / great food is key to a wife / mother nurturing her husband and kids (for food is far more than just physical nurturing it is also about the heart, soul and love that goes into it!).
