Chef D and Chef Matthew demonstrate how they make pizza for Convention Center staff and partners to add to their at-home cooking options.
Here's the recipe:
4 cups Flour (must be Bread Flour or High Gluten Flour)
1.5 teaspoons Instant Yeast (2 teaspoons if active dry)
1.5 teaspoons Granulated Sugar
2 teaspoons Kosher Salt (1.25 teaspoons if substituting table salt)
1.5 cups Water
2 Tablespoons Extra Virgin Olive Oil
Mix all ingredients with a dough hook until firm and holds a “window”. (If you don't have a mixer and dough hook, you'll be in for a big workout mixing it by hand.)
Refrigerate/ferment overnight.
Cut into eight pieces, roll them round, cover at room temperature until they puff out (about an hour or so)
Roll, stretch and make pizza!!!
When ready to cook, the chefs recommend heating your oven at home to it's max temperature (usually around 500 or 550) and then cooking for at least 6 minutes. Then monitor the crust for your preferred level of crispy!
