Doing some digging, Persedo has US Patent 9200243 on their process. Reading through this, it looks like they put the spirit into a container, and pull a vacuum on it sucking a gas (not sure what gas they use) through the liquid, and subject the whole thing to low frequency audio waves (in the filing, they say between 1-10Hz). They say that this removes "impurities" from the liquid. If this is happening to already aged whiskey, I question what all gets removed. Or, is it maybe they do this on the new make?

I see Bingham's a lot in Total Wine. I was curious on it but I may pass on it unless it goes on sale. Also thanks for covering this topic. I was very curious about it. All I've ever done is using wood spirals and put whiskey in there. wasn't the best experience

The dewers mezcal finish was discontinued 😢, after I saw your oof video about it I really wanted to try it so I eventually ordered it online, though it was very hard to find even online. I wish they’d bring it back

It saddened me when I found out that the market for used sherry barrels exceeds that of sherry itself. Hence a lot of sherry is basically made just to season barrels and then turned into vinegar.

I don’t get how sherry barrels are the second most common type of finishing casks when there is so little sherry produced and drank, compared to scotch and bourbon. Where are all these sherry barrels coming from? (Or are the same ones used multiple times?).

Specifically on Balcones I'm really hoping we see what they can paint with the expanded pallette afforded them by Diageo. We saw what they could do before and now they should have far better access to superior finishing casks and a variety of unpeated, highland peated and Islay peated malts. I'll be very disappointed if we don't see magical things, it will feel like a squandered opportunity.

I think we'll continue to see great things from Balcones, but that's not actually how the system works. Getting acquired doesn't mean they get to use everything Diageo makes. And it doesn't mean they'll blend or make whiskey from anyone but their own distillery. Balcones has always had access to a wide variety of casks for finishing and blending because they bust their ass tracking them down. And the variety of products they create are also huge compared to most Diageo distilleries. So IMO, the opportunity provided isn't a massive change in what they make. The real opportunity is the widened audience that could be possible with a globally owned distribution network. and that means more people drinking Balcones. Which is a good thing :-)

@@WhiskeyVault sorry I meant access to malted barley for production as opposed to the actual final product for blending! That's interesting, I had hoped that they would be able to leverage more of the resources available to Diageo as a group. You can never know the full circumstances of a deal, but if the sole benefits were finance and distribution I would have looked for an alternative to a sale. Typically with creative businesses any loss of control by the owner is painful and the benefits need to be emotional as well as commercial.

From talking with the people there, the Diageo sale gave them the ability far more creativity than they had before. So hopefully, it means we'll get to benefit from drinking better and better whisky!

The longest finish I've ever seen on a bourbon is from Toppling Goliath. They sold a 12 year product with a FIVE YEAR Port wine finish. I would not really consider that a "finish" so much as a continuation. When your finish is over 25% of the product's overall age, that's not a finish.

Daniel, caffeine and liquor have sent me into a fib, so I’ve given both up. Is there anything in the bourbon space that is very low alcohol or non at all? I miss the taste.

Perhaps there's something wrong with me, but I see absolutely nothing wrong with a craft guy getting him first rotation through the used barrel quickly because the tannin saturated leftovers get mixed with their whiskey. I want a tasty product and if that happens through essentially blending then what harm is being done? It's a real product that comes about through real wood aging, it's just aging of different ethanol than came out of their still. It's not like it's being adulterated with non-food stuff. I mean on the macro scale i understand why we don't allow random booze to be blended with bourbon and sold as bourbon, that's how you end up with American light whiskey which is a vastly inferior product, but a craft guy getting some accelerated aging from some leftover sherry squeeze isn't bothering me =)
