Cultured meat is a novel technology that seeks to grow cells in vats to produce muscle for consumption as food. It became legal to sell in the US earlier this summer but is only available to buy in limited qualities. However, with nearly 100 companies world-wide active in the area, it is likely it will become legal in more nations in the coming years.
Dr Stephens discusses where the technology is currently, why people want to make it and what the challenges are. Cultured meat promises an extraordinary future but if that future will come to be, or whether it is desirable, remain open questions.
