Oh my goodness, y'all, the weather has finally cooled off and it's officially soup season!!!!! YAY!! So what better time, than to try out my new Ninja Foodie Possible Cooker Pro. I let Michael pick the first recipe, and he decided on the Minestrone soup. I'm going to change it up a little, but I won't go to crazy. Let's go to the kitchen and we'll make this warm and delicious soup together. Are y'all ready? Ok, here's what you're going to need:
1-lb-mild or spicy italian sausage
1-TBSP- vegetable oil, I used garlic infused olive oil, just use what you have
3-carrots, peeled and thinly sliced
3-celery ribs, thinly sliced
1-white onion, chopped
4-garlic cloves, peeled and minced, or you can use 2-TBSP squeezy garlic
1-can (28 oz) diced tomatoes, if you don't like chunky tomatoes, you can buzz them in a food processor first
12-c-chicken stock
1-TBSP-dried oregano
Salt and pepper to taste
1-can(12 oz) green beans
1/4-c parsley, chopped
1-c-parmesan cheese
Red pepper flakes, as desired
Turn dial to sear/saute, and set temperature to HI and press start. Allow the Ninja to preheat for 5 minutes.
Brown the sausage, breaking it up as it cooks. Once all of it is brown and no pink remains, remove the sausage and drain it on a paper towel lined plate.
Add oil, carrots, celery, and onion, and cook for about 5 minutes, stirring occasionally. Add garlic and cook for about 30-45 seconds, not letting the garlic burn.
Add tomatoes, stock, oregano, pasta, salt and pepper and the parmesan cheese rind, if you have one, and stir. Then cover with lid. The directions in the recipe state to turn the dial to bake, set temp to 400 and set time for 30 minutes. This particular day, my son had football practice. I turned the dial to slow cook and let it cook for about 2 hours. Ok, once it has cooked for at least 30 minutes, add the green beans and cook about 5 minutes. When cooking is complete, remove the parmesan cheese rind, and the serve with chopped parsley, parmesan cheese and red pepper flakes, as desired. @NinjaKitchenUS
