LEMON DROP ENERGY BALLS
1 cup almonds or cashews
1 cup packed pitted medjool dates
½ cup unsweetened shredded coconut
1 tbsp. maple syrup
2 tbsp lemon jice
½ tsp. vanilla extract
½ tsp salt
1 tbsp grated lemon zest
Pulse nuts in food processor, then add dates, coconut, maple syrup, lemon juice, vanilla, lemon zest and salt. Process until well combined. Roll into 1-inch balls and roll in additional coconut and lemon zest. Refrigerate for at least one hour before serving. Store in the fridge for 3 days or freezer for up to a month.
