紅蝦榴蓮糯米糍 Red Prawn Durian Mochi
又到榴蓮飄香時,天下所有食物都有人喜歡有人厭,但是估計沒那樣能像榴蓮這麼極端,喜愛的感覺她芳香誘鼻,滑如奶酪;厭者感覺它如毒蛇猛獸,聞而遠之!紅蝦是檳城特有的榴蓮品種,紅蝦的果肉顏色比其他品種偏深,特別細膩,幾乎沒有纖維,有如蜜一般的甜,再加之核小,是大受好評的一個品種。
榴蓮糯米糍食譜:
皮料:
150g糯米粉
30g澄面粉
40g細砂糖
1 湯匙油
280ml水
餡料:
150g 榴蓮肉 攪爛
沾粉:
100g糯米粉中火炒15分鐘
做法:
1.將全部材料攪拌均勻,倒入一個已抹上油的蒸盆中,用中火蒸約20分鐘
2.取一份皮,攤開,弄成窩型,加入榴蓮餡料,收口,輕輕的弄成圓球狀
3..沾點炒熟的糯米粉,即可
Durian Mochi Recepi:
Ingredients for skin :
150g glutinous rice flour
30g wheat starch
40g fine sugar
1 tbsp oil
280ml water
Ingredients for filling:
150g Durian mashed
Flour for coating:
100g glutinous rice flour, fried for 15 minuets over medium heat
1.Mix all ingredients until well combined. Pour into a greased steaming tray and steam over medium heat for 25 minuets.
2.Take a portion of the skin and make it into a nest shape, add durian filling, close it and make it into a ball shape
3.Dip some fried glutinous rice
