Time to get the smoke rolling and the beaver meat preserved. I process a couple pounds of beaver meat by slicing it thin then add some seasonings. The meat then heads into the smoker where it can smoke for a few hours. After smoking and drying the final product is a huge success. With this test batch finished I can continue to work through the remaining meat and have a tasty snack to enjoy around camp.
