I love going for lighter recipes especially if I need to leave the house in the heat or after a long day in the heat.Todays recipes are very quick and easy to make and also very light in the belly! 🌼Avocado, Basil Chicken Pasta Salad (5-6 bowls)
-1/4 of a red onion chopped up
-1/2 cup of sliced cherry tomatoes
-5 to 6 basil leaves chopped up
-1 small avocado, cut up
-1 chicken breast or you can use rotisserie chicken
-8 to 10 oz of rotini pasta
-Seasoned chicken with salt, pepper, and garlic on both sides.
For the dressing:
-1/4 of white wine vinegar
-1/4 cup plus 2 tbsp of a high quality olive oil
-1/2 to 1 tsp of garlic powder
-2 tsp of italian seasoning
-1/4 tsp of pepper
-1/2 tsp of salt
Adjust seasonings to your taste!
Bake chicken for 15 minutes on 350°! Shred and add chicken nd all other ingredients into a bowl! Mix and refrigerate for at least 30 minutes.
🌼BLT Naan Bread Pizza (for 1)
-1 naan bread
-2 slices of bacon cooked and chopped
-3 to 4 tbsp of mayonnaise
-1/2 cup of shredded mozzarella cheese
-1 roma tomato, sliced
-1 cup of shredded lettuce
Bake on 375° for 12 ish minutes!
🌼Veggie and Deli Meat Wraps (per wrap)
-1 slice of cooked bacon
-1 slice of deli meat of choice today I used chicken
-1 large slice of tomato, you ma need a few slices if your tomato is tiny
-a few slices of cucumber
-tortilla
-a few slices of red onion
-a sprinkle of shredded carrots (I forgot to show those in the video!)
-1/2 cup of shredded lettuce
1 slice of pepper jack cheese or cheese of choice
-toothpicks to hold
I LOOOOVE dipping mine in some spicy ranch!!!🔥
