Revived after 523 years, spirit is once again flowing from the copper stills at Lindores Abbey Distillery. With Lindores Abbey’s widely recognised site of the first recorded distillation of Scotch Whisky in 1494, it was Brother John Cor, a Lindores monk, that was commissioned by King James IV to turn 8 bolls of malt into whisky (or Aqua Vitae, as it was then known back in the day). 8 Bolls of malt amounts to around 500kg in modern terms and would have been enough to make about 400 bottles of today’s whisky.
In 2017, Lindores were delighted to re-open the history books when distillation recommenced, and in 2021 they released their first single malt whisky. With a major focus on local talent and production in the Scottish region of Fife, Lindores currently use a unique strain of barley grown on local farms whose fields surround the distillery and would have originally been abbey lands. They have three copper pot stills, one large wash still and two smaller spirit stills, which allows greater copper contact in the final distillation, creating a clean and delicate flavour in the spirit. Fermentation is happening in traditional wooden washbacks, supplied by Joseph Brown of Dufftown. The water comes from a borehole near the distillery, the same water supply used in 1494. The team’s focus on local ensures they can minimise their carbon footprint and control all aspects of distillation to produce award winning single malt scotch whiskies. A real commitment and caring for the land and environment around the distillery is core to their mission.
