Miso Soup
4 servings
Make a big pot by doubling all the ingredients.
4 cups water placed in a quart size jar with a 4 inch piece of kombu and steeped for 30 minutes or longer (or just water)
or 1 packet dried Kombu soup powder mixed with 4 cups water
1 teaspoon Takii (mushroom stock powder) or ground dried shiitake mushrooms
1 cup vegetables: Choose one or more-- 1/2 cup thinly sliced mushrooms, 1/2 cup corn, 1/2 cup sliced snow peas, 1/2 cup julienne carrots, 1/2 cup cubed sweet or white potatoes, 1/2 cup chopped onions, 1/2 cup sliced green beans, 1/2 cup peas, 1/2 cup diced zucchini, 1/2 cup sliced Napa cabbage
In this video I used mushrooms, carrots, zucchini, corn, and Napa cabbage
1 tablespoon dried wakame seaweed, rehydrated in cold water
7 oz soft tofu (1/2 block), drained and cut into 1/4 inch cubes
3 tablespoons white miso paste or a combination of red and white miso
(2 tablespoons white, 1 tablespoon red). You can use more or less miso paste depending on your taste preferences.
2 scallions, white and green parts thinly sliced
Options:
1 tablespoon rice vinegar
1 teaspoon grated ginger
1 teaspoon minced garlic
Bring the water or kombu stock to a boil. Add the Takii or shiitake mushroom powder, if using. Add at least 1 cup of vegetables and reduce to a simmer. If using, add the rice vinegar, ginger and garlic. Cook vegetables for 3 minutes. Add the Napa cabbage last.
In the meantime, mix the 3 tablespoons of miso paste with 1/4 cup of the heated stock from the pot. Set aside. Drain the wakame, (squeeze it to remove excess water and add it and the scallions to the soup. Add the tofu and cook for another minute to heat the tofu thoroughly. Turn off the heat and add the miso mixture. Stir to combine well.
Remove the pot from the heat and serve. Sprinkle with more thinly sliced scallions and shichimi togarashi (7 spice pepper powder). I like to eat the miso soup with a bowl of brown rice or Japanese rice.
